How about home-made lasagne (vegetarian if you like)? Or stuffed pancakes? Home-made yorkshire puddings with lovely fillings? Stew (my mum's recipe makes divine stew with millions of vegetables and dumplings...you don't notice the low proportion of meat)? Ratatouille with pasta? Ratatouille with a poached egg for each person? Risotto? Meatballs with pasta?
Can't think of owt else at the moment but no doubt everyone else will!

We too are having to cut back somewhat at the moment as hubby has lost his job so I seem to be pretty well versed on this atm!
Our food bill this month for the two of us cost a total of £70 which included £20 food from M&S as we had vouchers we decided to use, so it would be less than this if buying cheaper food from a supermarket. The £70 also included all toileteries and cleaning products for the month. So just about £1 a day each on food. It took a fair amount of work to get it down to this, and what I did was to plan the shop online, searching out the cheaper alternatives, then write a list, go in to store and STICK TO IT! LOL.
There are loads of helpful threads on here for cheap meals, and I think the general thoughts seem to be to "bulk out" food as much as possible, and shop around for the deals. Buy cheap non-brand alternatives where you can (they're actually suprisingly good), and cook food from scratch where you can, and I use frozen veg as it is cheaper and doesn't go off. So if it helps, this is what we'll be eating this month:
Breakfast - buttered toast - cheap bread, own brand marg
Lunch - home-made popcorn (buy a big bag of corn), cereal bar, apple, satsuma (or whatever other fruit is cheap that week) & baked potato and marg. Or Sandwiches
Dinners- (selection listed below)
Meatloaf with mash & veg (meatloaf = 1/2 tray of mince, stuffing mix, splash of water, knob of butter, and an egg, mush together and bake for 30mins or until cooked. Can bulk it out with mushrooms/ onions or other veg. Serve Meatloaf in 4, allowing for 2 meals for 2 people out of this. Could also serve with yorkshire puds if hungry! Good as alternative to a roast dinner.
Lasagne (again will make 2 meals out of this)
Chicken Casserole (cooked in slow cooker), will make enough for two meals
Pasta with bacon and veg with chicken soup as a sauce (will eat this a couple of times in the month
Fish Pie (with mash potato on top), again will bulk this out with lots of veg, make myself and make enough for two meals.
Risotto (one mushroom and one bacon or chicken), will bulk out using more rice and veg than usual and will likely make enough to have for lunch the next day
Toad in the Hole (cut up sausages and add onion into the mix to bulk it out)
Stuffed Savourey Pancakes
Going to try Savourey Bread and Butter Pudding from a recipe I found on here
Our "posh" meal of the month is Salmon, cooked in tin foil on slices of lemon, tarragon and salt and pepper, with potatoes and veg
Stir fry - cheap noodles, meat (could be chicken/ beef/ turkey cut into strips), stir fry veg (tesco do a really cheap frozen selection which is pretty good for this), and I cheat and use a sauce.
Baked Potatoes with beans cheese/ tuna & sweetcorn with a salad? Could also add some cold meat if you like?
I'm also trying some homemade fish cakes from another recipe on here which I'll serve with potatoes and veg
Beef Stew and Dumpings
Fajitas (sp?)
Um, think that may keep you going for a while??!
Goodluck. xxThank you to all the compers!0 -
bulk out is a deff
i managed to make 250g mince into 7 meals for me and DS (to be fair he only have a small amount as he only 3). I would never have been able to do this before i started using this site. Its all healthy aswell as i only used veg and oats to make it stretch!! Loads of lovely helpful people and ideas on here
