Fridge-contents challenge!

Hi all,

I have some items in my fridge and could do with some inspiration please, I know you're all so good at it.

I have:
Leeks 1.5
Carrots 2
Aubergines 2
Celery
Fennel bulb 1
Parsnips 1.5
Butternut squash (small and squat)
Spring greens
Little bit of broccoli
Red and green peppers
Potatoes
Onions

I also have eggs, both flours, myriad herbs and spices, cheeses, pasta, rice, cous-cous, milk, stock cubes etc

In the freezer I have salmon, smoked haddock and cod fillets 2 of each (I was going to make a fish pie with this recipe that I really like using 1 of each), frozen mash (homemade), frozen veggie sausages, frozen tomato sauce base, frozen chilis, ginger and lemongrass.

Any ideas? I also have a liquidiser, hand mixer and mini-chopper/blender, no food processor though I really really want one!

Edit: also have orange and green lentils, pearl barley, dried peas, tinned tuna, sweetcorn and tomatoes

    Fish Pie served with roasted vegetables?
    Stirfry all the veg, put in a tin of tomatoes and some pasta and you have the meal I had as a student almost every other day!
    Make Pizza base with the flour, eggs etc, use the tomato sauce and a mixture of vegetables!

    Smoked haddock, leek and potato makes a yummy soup (cullen skink).

    The squash, broccoli and peppers would make a nice frittata.

    You could use the rest of the squash, carrots and parsnips to make a spicy moroccan style tagine to serve with couscous.

    Stir fry spring greens to eat with the fish pie or make fish cakes.

    I'd second the idea of a frittata. You can use up a lot of odds and ends of veg in those. :) Also, the butternut squash would make an excellent risotto - mmm. The aubergines would lend themselves nicely to a moussaka that you could fill out the mince with some of the extra veg.

  • Nice, I like the idea of moussaka, I'd be able to use up some potatoes too. I'd have to use lentils for the base as am (fish-eating) veggie :)
