    I also add sugar, and after the first 30 mins have gone, I take my roasting tin out of the oven, every 10ish minutes to both check them and toss the veg thoroughly with the olive oil again, we had these yesterday (carrot, parsnips, onion, garlic, salt, pepper, fresh herbs, sugar, olive oil) and they were delicious! Good luck please post your final recipe and how it went

    Hi everyone sure someone will be able to help me, even if I do sound a bit thick :o

    I'm doing roast veg tonight ( first time usually have it boiled) I'm wondering the best way to do it, do you par boil first etc, I'm doing new potatoes, peppers, onions, carrots and possibly mushrooms

    Any suggestions greatly received, this is to be served with pork chops :)

    The spuds and carrots I'd par boil as they generally would take longer to cook. Everything else I'd just put straight in the oven.

    When we're roasting veg (peppers, red onion, parsnips and carrots usually), a spoonful of honey drizzled over everything plus a bit of cracked black pepper makes it ever-so-tasty :D

    Personally, I don't par boil anything.

    After chopping the veg, I put it into the roasting tin with a few peeled garlic cloves, lashings of olive oil, salt and pepper. You can add a sprinkling of sage, rosemary etc (whatever you fancy, or just leave it out)

    I would put the root veg in first, add the peppers maybe about 20mins before it's all ready. I like my peppers to have a bit of a bite still left in them.

    It's totally up to you though :)

  • I would probably parboil the potatoes and carrots first. Massage some olive oil over, salt and pepper, possibly some fresh herbs if you have them then roast.

  • they roast quicker than you think!!!! and if its for pork chops, i cut an apple up into chunks, say four pieces or in half if they are small, and roast them in with the veg. really nice!!!!! pears do nicely too.

    I love roast veg! ANY veg is improved by roasting in my book!
    I do like to parboil potatoes tho - in salted water. I just cut up veg bearing in mind that heavier veg will take longer to roast than lighter veg. Drizzle either olive or sunflower oil over - lots of black pepper, sprinkle of sea salt and perhaps some unpeeled garlic cloves (slightly crushed) and 45 mins in hottish oven and you have your plate of delicious veg. dont be afraid of trying beetroot, cauli or even swede this way!

    they'll cook quicker and look really lovely. If I was doing roast veg I'd put cloves of garlic in and also tomatoes (even tasteless cheap tomatoes taste good roasted). If you do plenty of veg and have some LOs, stir into pasta for a lovely lunch. Makes a change from sarnies.
