Left over cake

Happy New Year Old Stylers, A coffee and walnut cake I made for Christmas is untoutched and going dry in the tin. It has butter icing on the top and I have no space in my freezer. Has anyone any idea what I can do with it? Thanks.
The time will come when you have everything but time.

How about removing the icing, slicing the cake thinly, soaking it in alcohol (Tia Maria or similar would be perfect) and using it as the basis for a coffee/chocolate trifle? A layer of chocolate custard, whipped cream and a shake of cocoa powder...Bob's your uncle (if you like that sort of pudding).

MsBA bit of Baileys might be nice.
Or, cut it up, place in dessert bowls, pour over cold black coffee and top with whipped cream.
It's definitely a pudding in the making;)0 -
