I would like to use up some bananas and apples (2 eating 1 cooking) and make some muffins and I know I have seen loads of good recipes but can't find one with both things!
I also prefer to use oil instead of butter if poss.
Finally I want to make these for lunch boxes - I am best to cooker then freeze or freeze then cook?

Why not find a banana muffin recipe and an apple muffin recipe you like. Then use half the quantities of each recipe and mix them into an apple and muffin recipe :T
Definitely freeze them cooked

I have found new recipe that sounds really good but it uses butter. Does anyone know how much oil I should use for 75g/3oz melted butter?0
