Peppers with fridge burn

Hi Everyone
Happy New Year, and thank you so much to everyone that helped me and gave me fab ideas last year
My fridge seems to be at the right temperature but sometimes things that get pushed to the back get partly frozen - usually things like peppers and cucumber.
I can't think of anything I can do with frozen cucumber (is that even beyond all you os'ers :rotfl:) but would it be okay to chop the peppers and freeze them? I have never frozen peppers before but I know lots of you do. Do they go soggy?
Not sure if they would go soggy anyway because of having fridge burn?
It's really frustrating because I have to organise my fridge so that nothing at all touches the back and things like veggies have to stay close to the front, but if I turn the fridge down it doesn't stay cold enough
Any ideas?

I used to find that my fridge would do that if I had it packed so tightly that air couldn't circulate around things.
(I also have a young grandson who is very clever at altering the dial inside - but that's another matter altogether.)
