I have about 8 sponge fingers left over from making a trifle. I don't really want to make another trifle and my DD (aged 3) will snack on them but does anyone have any better ideas for how to use them up?

LOL, me too!
For something simpler, just crumble the sponge fingers into 4 glasses/cups, top with frozen berries and custard (and/or whipped cream). Enjoy!
Of course, you can always pour on a little sherry/rum/Tia Maria before the custard layer... Mmm!
ETA: OK, this is similar to trifle, but easier to make and there is no jelly...Cogito, ergo sum.0 -
How about freezing them until you want to make something else?:hello:0

This was an idea I had for leftover sponge fingers. I didn't make it because frankly I don't need to eat any more puddings.
Soak sponge fingers in a mixture of Baileys and coffee (or rum and coffee/brandy and coffee etc).
Layer in dessert glasses with whipped cream.0 -
Put them in an airtight tin or jar until you need them - they'll keep for ages. Just don't forget you've got them!0

Sandwich the sponges together with jam and serve with custard over the top.
