No left overs for us this year as we had fillet steak and chips! so I'm really jealous of you all, the recipes sound delicious. The ham I shared with my DS1 and the stock went into the freezer for soups.0

I was inspired by Gordon Ramsay's F-Word, he showed making these with a mince filling using pre-made puff pastry.
Just brush the pastry with your leftover brandy butter, spread out some of the leftover pudding, roll towards the middle from both ends, cut, brush with some more brandy butter and bake. They were yummy with a nice coffee, still have more pudding and will make some more this week!

I read on another thread that someone had mixed it with icecream and put it back in the freezer for christmas cake ice cream

A friend told me she crumbled it up and used it in the topping for a fruit crumble. That sounds seriously good!Nothing tastes as good as riding a horse feels0 -
Every christmas I always make sure I have some sweet and sour sauce in the cuboard as its just as good using turkey instead of pork0

Samosas
I made samosas, using some leftover potatoes, runner beans, turkey and ham. I followed the Hairy Bikers (12 days of Christmas) idea, which uses strips of double-layer filo pastry to make the samosas.
I just chopped the filling small and mixed it with a couple of spoons of mild curry powder. Use melted butter to seal the pastry, and deep-fry for a few seconds.
Delicious! Plus, they can be made ahead and warmed through in the oven AND they freeze beautifully.
Christmas Meringue Pie
Crumble up leftover christmas pudding (mix with leftover mincemeat if you've got any - it makes it a bit 'wetter'). Pile into a ready-made sweet pastry flan case.
Whisk a couple of egg whites with some caster sugar until it forms soft peaks, and pile onto the pudding/mincemeat mixture. Cook in a low oven for about 15-20 minutes, until the meringue is golden brown.
Great with cream or ice-cream.
