raspberry and strawberry freezer jam

raspberry freezer jam
11/2lbs raspberrys
2lb castor sugar
1/2 bottle certo ( liquid pectin)
2 tbsp lemon juice
crush the rasps and sugar together, leave in a warm place 1 hour, stir
occas, all sugar should be dissolved. add certo and lemon juice, stir for a further 2 mins
pour into clean marg tubs or similar, put on lids and freeze use within 6 months and keep in fridge
strawberry freezer jam
11/4 lb fresh (ripe ) or frozen thawed strawberrys
2lb castor sugar
2 tsps lemon juice
1/2 bottle certo
make as above, this tastes lovely and fresh esp with vanilla ice cream

yes it is i made it every year when the children were here, it was lovely to have with ice cream as an alt pud at christmas the strawberry is a nice way to have frozen rather than just freezing the berries on their own, the certo is a natural pectin and you dont taste it, it is less thick than ordinary jam but would do well in black saturns cobbler0
