How do you make your bubble and squeak mine never turns out well ?:confused:

    I think that about mine but everyone loves it in my family. I bung the leftover cabbage, mash and any other veg in a large frying pan and fry then stick the whole pan inder the grill to brown the top.

    I slice the left over potatoes and fry them with one or all of the following:
    * a small onion (or half a medium onion)
    * a rasher of bacon cut up into smaller bits
    * little cubes of stale bread.

    I reheat the cabbage in a microwave.

    When the potatoes/bacon/croutons are brown and crunchy on the outside, and when the onion bits are soft, I tip in the hot cabbage to the frying pan and press it down. Sometimes I add a beaten egg to make it into a thickish omelette type thing. Cover with a plate and leave to cook through. Tasty, tangy, crunchy and a lovely accompaniment to left over turkey. Ummmmmm:beer:

    Fry an onion in dipping, when softened but not brown add the mashed potato and cooked cabbage, fry slowly until well browned - browning too quickly will cause the mash to have a soggy consistency - and turn with a spatula in sections, a quarter at a time, adding a little more dripping if necessary. Oil, lard, butter etc don't give a 'genuine' flavour...you can buy dripping from supermarkets or a butchers shop. My granddaughter says adding dash of ketchup while frying gives it a good flavour while I prefer the traditional recipe.

    Adding chopped bacon, sliced sausage or strips of meat turn it into a filling one-dish meal.

    Bubble and squeak is made of mash cabbage/chopped sprouts and any other veg you have left over, mix together and fry till browned, turning over when necessary... we always have it on Boxing day with left over meat and pickles...

    I cook up mash, fry an onion in some butter, mix them together then stir in the leftover veg (usually sprouts, greens, runners and peas).

    I then make them into little flat patties and fry individually on both sides until warmed through and browned on both sides x

    I fry some onion and bacon together, add cabbage and any other veg, then add either mash or boiled spuds. It has to go nice and crunchy so I'm sometimes there a while, never thought of shoving it under the grill though, good idea!!

    We've had a lot of this lately and I rescued M-i-l's leftover mash and veg from the bin and s-i-l's dogs today to bring home for this evening's supper. I'm not sure that technically it's correct but we put some oil in the frying pan, bung in mash and leftover veg and leave on the heat, turning when it starts to brown. Sometimes I mix some sage and thyme in - but today we'd got leftover stuffing so that spiced it up a bit.

    My boys call it 'vegetarian stuffing'!
