Use by date - cauldron mushroom burger

Hi, I am planning to make a vege burger wellington for DD for christmas dinner (you just wrap a cauldron mushroom burger in puff pastry - daughter loves it). But I just looked and saw the use by date was tomorrow. I'd normally not worry, and just do a sniff test, but I don't want to stuff up her special meal: have other people used these past the date?

Do they freeze ok? They sometimes crumble a bit when you cook them after theyve been frozen but if you put it in the pastry now and freeze the wellington then it won't matter. I freeze them quite often when I see them on the reduced shelf in Tescos.

I wouldn't worry about it, I've eaten those burgers at least a week past the sell-by date and have never suffered any ill-effects. Those dates are a very vague recommendation not a rule. If it's the same month, I eat it.0

Thank you all, as alway! If I have enough pastry after the pie tonight (leftover casserole from yesterday for the meateaters and a leek/sweetcorn/cheese sauce variation for DD) I'll wrap the burger tonight, and if not, I'll freeze it anyway.
