suggestions for dinner tonight.....

Please, help me with my dinner tonight!
I have in my cupboards and freezer:
potatoes
tin chopped tomatoes
a red onion
peppers
cheese
rice
cous-cous
nori (seaweed) sheets
red lentils
veggie mince
veggie bacon strips
veggie burger
Had pasta last night, so don't fancy that again. Just need to cook for myself tonight and trying to avoid chips!

I would use the mince, onion and tomatoes as a base for a cottage pie. After you've eaten leave it to go cold and cut it into portions for the freezer.
You could also do the veggie burger with potatoes sliced very thinly and layered with the cheese and onion. Pour over some of milk mixed with a stock cube.

If you have enough nori sheets i would make sticky rice rolls with different fillings eg red onion and cheese, pepper and spiced lentils. just roast the nori leaf, boil rice till it is sticky put on nori leaf and then put one line of the filling in the middleroll up (bamboomats are handy if youhave them) and slice into 1/2 inch rounds.
