    I often make jellies with fresh fruit in them. They store well in the fridge for several days. Just don't include pineapple or kiwi fruit as they contain enzymes which will prevent the jellies from setting. Fresh pineapple when sliced will store well for up to a week in the fridge if kept in a covered plastic container. Fresh crudites of pepper, celery, cucumber, mouli will also store for a couple of days in a sealed container but they're really better cut fresh on the day of use.
  • As a change from fruit in jelly you could make stewed fruit which would freeze fine and give the option of a hot pud ( if you have m/w at work) maybe with yogurt instead of custard.

    For fast chopping of veg I love my Nicer Dicer. It really is very easy to use and saves loads of time for prepping salads and soups/casseroles/stir fries etc. I got mine from Asda but it is worth sitting through the cringe-worthy Sky informercial for ideas.

    Also for chicken breasts, if you are near a farm foods they sell a bag of 6 cooked breasts for £3 but are 2 for £5 so very good value. They reheat from frozen in around 3 mins in the m/wave.
