UHT milk

just gone into the kitchen to make some cauli cheese but not enough 'fresh' milk, can I use the UHT just the same,

    yep I only use UHT milk and I make cheese sauce with it all the time

    yes of course - I find it a little sweeter than pastuerised though but enough cheese hides that! or add a little made mustard which i do anyway.

    Here in France fresh milk is rare and very expensive (more than 1 Euro for a litre!) - everyone French seems to buy UHT only. So in our household fresh milk is only for DH's use in cereal, tea/coffee, porridge and drinking (as in drinking a glass of milk). I use the much cheaper UHT milk for all other purposes, like mashed potato, sauces, custard, baking, poaching fish etc. That works absolutely fine. As for me, I prefer my tea and coffee black and have toast for breakfast, so the fresh milk is really only for DH. All the same he polishes off 6 litres a week with ease...... ! And I have to keep some in the freezer as well, because you can't count on the supermarket always having fresh milk available. Quite often the 6 bottles I buy for the week is all they have - or I go home with less.
    Not sure why I'm telling you all this, maybe just to say that fresh milk is not a given, it can be a real luxury!
