HELP - how can I rescue my nougat?

I've been doing home-made sweets for gifts this year, and thought I was doing well - until the nougat!

I did everything by the book, used a jam thermometer and timer rather than my usual way of making it up as I go along, so I honestly don't know what I've done wrong, but instead of a nice hard block to cut up I've ended up with something akin to the middle of a walnut whip but thicker and sticker. It holds its shape but if you press it it all oozes out at the sides.

Can anyone think of a way to rescue it? I spent hours on it and don't want to waste it, so even making it edible in a different form would be great. I know if anyone can come up with an idea it will be the people on here!

    I don't know how to fix it, but if you abandon all hope you could always cut/pull/scissor to bits and stir through icecream

    Ooh I love that idea - nougat ice cream yum. It would probably go quite hard in the freezer if I squash it out into a thin layer, then I could break it into pieces and mix it with vanilla. Thanks for the fab idea - sometimes you just need someone to look at a problem a different way.

  • could you cut it (scoop it) into bits and dip them in chocolate? soft nougat 'enrobed' in dark chocolate sound yummy to me!

    my mu made turkish delight once when we were younger.. dont know what went wrong but it didnt set and the icing sugar stuff went crispy on the top and you had to eat it with a spoon.. yummy in very small doses!

    So is it like Snickers type Nougat? Although the ice cream idea does sound good, but if it is soft like Snickers type Nougat you could do as Charliee suggests and coat in chocolate either with or without peanuts. http://www.chow.com/recipes/11059 What nuts did you use in the nougat, maybe making the caramel with that nut would make it a more consistent confection.

    That also sounds nice. It's stickier than Snickers but about as hard so I think it will work if I can get past the problem of cutting it up. I made it with walnuts so a half walnut on top would complete it nicely. It was made quite differently from the one on chow.com (what a fantastic site that it, thanks for passing it on!) but I imagine the result will be similar.

    Will report back when I've had a go.

    BTW, just wanted to report some very successful coconut ice, coffee walnut fondants, chocolate peppermint creams and marrons glace.

    I've finished work now till after Christmas so I'll be having a go at a few more over the next few days - plans include violet creams, vanilla fudge and treacle toffee. Might even have a go at turkish delight and hope we don't end up eating it with a spoon like Charliee!
