tax return info for mortgage application?

Hi, I wonder if anyone could answer a question. My partner and are trying to find a mortgage deal, at the moment he is in full time employment (16.5k annual salary) and I am self employed (I file self assesment - I don't have an accountant, as there's not much I can claim for I'm basically a contract worker who invoices the same companies, so all straightforward) My last 2 years returns have been 28k and 31k and this year (up to Dec 2009 I have proof of payment for 18k worth of jobs done but I have been told that this 18k will not be taken into account for the 3 years mortage accounts as I don't have an accountant and this tax will not be filed until Jan 2011. Therefore my part of application will be average of 9k +28k + 31k ( (last 3 tax years) obviously an average of that is less than 28k + 31k +18k. Does anyone know if you are able to base your application on these earnings. Ie - I have earned 18k in 2009 and have recepits to prove it, but will not submit tax return for this to Inland Rev till 2011. I hope this makes sense and not too longwinded. thanks for any advice given

There is nothing to stop you filing your tax return in April 2010. Makes no difference to when your tax liability is due and payable.
