Need baking advice please

Hoping some of you more experienced pastry cooks can help me out. I’d promised to make the mince pies for work on Wed morning (don’t know why, I’m still a pastry novice!). Plan was to make them tues night but I’ve just found out courtesy of OH that we’re out then. So. Have a choice. Make tonight and biscuit tin until Wed morning or, and this is my big question, can I actually make them tonight (as far as putting pastry and mince into bun tins, and then put the bun tins in the fridge, just taking them out tomorrow night (when we get back) and actually cooking them then? Help!

I would make them tonight for Wednesday, storing in a tin would be fine.
I think after you have been out for a night the last thing you want to do when you come home is start cooking.If winter comes, can spring be far behind?

Make them tonight for later in the week - they'll be fine in tins for days.
If you do all the assembly and then stick them in the fridge, the juices from the mince will soak into your pastry and make it soggy, so it won't cook right.0 -
Will go with the make tonight option as that seems to be best bet then, thanks folks!0

You can always make and freeze them (before the cooking stage) then cook them straight from the freezer... I think!0

are really good,freeze lovely and defrost
quickly too the best I have tried in quite
a while
