I bought some coconut oil recently. I'm planning to make something tomorrow with it, by frying some onion and chicken in it, adding some tomatoes and simmering, but not sure which herbs/spices would go with it. Am thinking more of the spices really, was thinking of a spicy dish but not a curry.
I have ginger, tumeric, paprilka, cumin, ground coriander, ground cloves, cinnamon, nutmeg and cardomon pods.
Any suggestions please!

Cardamoms are great with coconut. I agree with those who have said that all the spices mention work in savoury dishes. I hardly ever cook rice without caradmoms, personally!
I'd vote for turmeric and ginger in your dish (it's hard not to call it a curry as it kinda is one!) and some rice on the side cooked with cardamoms.0
