Bought a salmon in Tesco, help

I bought a whole salmon from Tesco recently. The lady at the fish counter was very busy cutting them into steaks (right through the bone) for other customers. It looked like really hard work. She was using a huge knife which she was hitting with a mallet to make it go through the bone. When it was my turn I asked her if it was easier to fillet the salmon. She looked very relieved and said yes, so she filleted it for me producing two large pieces of flesh which I cut up when I got home.

As Jojo says this is what you want- 'fillet it please'. I think it is fairly easy to do at home though. Get a sharp knife, a long serrated one is best. Make a cut along the back of the salmon until you hit the big bone. Then slide the knife under the other bones on each side.

Alternatively cook the two pieces whole and use the cooked fish in various dishes. I'm sure there is a 'tumbledown' recipe using whole cooked slamon in Economy Gastronomy
