Is it too late to make a christmas cake?

Is it too late to make a christmas cake:confused:

I've never made one before & I've just plucked up the courage, but I fear I'm too late:(

  • Make it then put it in the freezer until you want to ice it. My old M and S freezer cookery book from 30 years ago had a Xmas cake recipe that I always used. According to the book, freezing accelerates the maturing process and my cake always turned out beautifully, even when I was last minute baking it.

    Hubby and i made two at the end of october, one for ourselves and one for family get together tonight, i was told by my 60+yrs mother that the earlier you make it the better as the taste matures with the weekly booze top up. If its made too late you wont get the richness.

    Of course it's not too late! Nigella's Christmas book includes both a 'Last Minute' christmas cake and a 'Very last minute' one!

    Think that`s to allow time to `feed` it with booze. I don`t like alcohol so don`t make mine as early. Also I use orange / apple juice (or even tea) to soak the fruit in - no booze at all.
    Whatever suits you best - no hard and fast rules for me.

    psso is quite right, just making your own really is the most satisfying thing.

    I`ve just been watching one of Delia`s vintage Christmas episodes on TV today, and I am getting tempted to make a christmas pudding for next year and keep it "under the bed " until 2010 !
