recipe for celery and white stilton with apricots soup?

does anyone have a recipe for this? i have looked and can't find one anywhere!

my bf's mum made it for us a couple of weeks ago but she won't give me the recipe lol

i know its probably very os, but i'd like to make it for my bf as a treat :)

    I have made stilton and celery soup before. I guess you could supstitute the stilton in the recepie i used for stilton with apricots.
    25g Butter (1 oz)
    1 diced onion

    5 Sticks Celery, roughly chopped
    300 ml Milk ( 1/2 pint)
    300 ml Vegetable stock ( 1/2 pint)
    1 Tbs Cornflour
    75g Stilton cheese, crumbled (3 oz)
    50 ml Single cream (2 fl oz) Optional for garnish
    Method
    • [FONT=Verdana, Arial, Helvetica, sans-serif]Melt the butter in a large saucepan, add the onion and celery, saut! until soft but not brown.[/FONT]
    • Add most of the milk and all of the stock, simmer for 20 minutes.
    • Once cooked, liquidise the soup until smooth. Return to the saucepan and bring back to the boil.
    • Blend the cornflour with the remaining milk, stir into the soup, simmer for 5 minutes.
    • Reduce the heat, stir in the Stilton.
    • Pour into soup bowls and garnish with a swirl of cream.

    i will be trying this tomorrow- i normally don't like stilton but i really liked this soup!
