Recipe ideas for tonight?

Hi everyone,

Haven't posted for a while as I keep getting caught using t'internet at work!

I need a good basic recipe for some sort of meatloaf for tonight.

Can I use frozen mince? I have mince that says it should be cooked from frozen!

I also have chestnut mushrooms, carrots, peppers, courgette. I will buy onions.

I have rice, bread (for breadcrumbs), pasta, potatoes and couscous.

I've had a look at the recipes for meatloaf but it doesn't really use most of the above ingredients.

Any ideas what I can do with the stuff I have as I have £4.35 in my bank to last me until Monday so I don't want to have to do a shopping trip!!

    If it were me, I'd use the frozen mince and while its still frozen, add chopped mushrooms and the courgette in tiny dice, some spicy seasonings like chilli or paprika, along with a herb or two such as marjoram and/or rosemary.

    Then I'd chuck in an egg or two (depending on quantity), a handful of crumbed bread (or semolina, if you've got it) to absorb some of the moisture as it cooks, and Bob's your uncle. Bung it in the oven and wait to see what happens. ;)

    Should be nice with some potato wedges (which you could do in the last half hour of the cooking time) or maybe a jacket potato, and some salad, if you've got it!

    I've used this recipe before, but i put in some grated carrot, chopped celery and less ketchup.
    You can get a jar of cheap applesauce from Lidl or grate an large apple into the mix. Works well with pork mince aswell.

    This meatloaf contains ground beef and pork, applesauce, ketchup, and seasonings,
    along with bread crumbs and chopped onion.
    INGREDIENTS:

    1 1/2 pounds extra-lean ground beef
    1/2 pound ground pork
    1/2 cup finely chopped onion
    1 egg, beaten
    3/4 cup applesauce
    1 cup bread crumbs
    3 tablespoons ketchup
    1 1/2 teaspoons salt
    1/4 teaspoon black pepper
    PREPARATION:

    Preheat oven to 350°. Lightly grease a 9x5x3-inch loaf pan.
    In a large bowl, combine all ingredients; mix well.
    Pat the meatloaf mixture into the prepared pan.
    Bake for 1 1/2 to 2 hours.
    Let cool 10 minutes; remove to a platter and slice.
    Serves 6 to 8.
