Bacon recipe?

Im feeling very lazy this evening & wanting to use up some cooking bacon that I've bought (its already chopped up into pieces).
I was going to make carbonara but I don't have pasta:eek:, I don't have rice either but would be very grateful for some ideas of what I could do with this bacon that doesn't involve too much effort;)

I cook a bacon and potato hot pot. Peel and dice some spuds, bung in whatever veg you have (onions, carrots, courgettes etc) and loads of olive oil and garlic. Stick in casserole dish and cook until spuds are soft and tender.I have a gift for enraging people, but if I ever bore you it'll be with a knife

I am useless at this sort of thing but the first thing that springs to mind is an omelette.I will save my tesco £1 savings stamps this year! .......so far = £50 (full card#1)
Card #2 £6. I will not be skint at Chistmas this year!

What about a baked potato? Cook the potato, scoop out the centre and mix with butter, black pepper and bacon pieces. Refill the potato, top with grated cheese and pop under the grill to brown. Lovely with salad and coleslaw.

Pink you've hit the nail on the head that sounds divine - potato is already in microwave!
Bitsy am going to use the rest of the bacon & make this hotpot & have it tomorrow. Sounds like a perfect winter meal - it's just im so hungry don't think I can be bothered to wait tonight!
