Advice for Healty Recipes Over Xmas

I am spending xmas day on my own because my bf has to go to scotland to spend xmas with his parents (he not seen them for two years).
Anyway I don't want to spend too much on food for xmas day for me alone and from 27-31 dec with my daughter.
I really want to create some healthy meals that involve spuds and lots of veg.:rotfl:
I usually eat pasta rice etc, love turkey and ham and chicken, but want to buy small portions to last throughout xmas.
I dont eat xmas pud or mince pies or xmas cake, too rich for me.
Thinking of getting some bucks fizz for myself for xmas day.
What do you other single people eat xmas day?
