Hiya!
Apologies if this is in the wrong place - I don't usually frequent the OS board.
I want to make a veggie lasagne but cannot cook to save my life so have no idea what to do. I don't even know if I bought the right ingredients! I bought 2 courgettes, an aubergine and onions as well as tomato puree, white lasagne sauce and pesto sauce. Already have the lasagne sheets in the cupboard.
Can someone please tell me where to start? For a start I don't know how to cook aubergine or courgettes and I don't know whether to cook the veggies first or put it all in..... you get the picture!
Thanks for any help :j0 -
Cook off onion for a few mins, add veg (chopped), add red sauce.
I have no idea how to make red sauce from tomato puree, I would use passata personally, but I guess it would be adding enough water to enough tomato puree with some basil in it? Could make it from pesto, again I don't know?
Once you've added red sauce...
Layer up the white sauce/red sauce veg mixture and the lasange sheets in an oven dish and cook for around 30 (ish) mins at 200C0 -

Hi There
YOu have some great ingredients there - it can be easier to buy a jar of italian tomato sauce - like dolmio/ragu/supermarket own make.
But roughly speaking - this is what i would do
Cook your veges. Warm up the sauces. Cook the pasta sheets in salted boiling water for about 8-10 mins until they bend but are not soft.
then layer up - layer of vege, pasta sheets, white sauce then dots of pesto. Keep going until you fill your dish - finish with a layer of pasta, white sauce and pesto - grate some cheese over the top and put in a medium oven - say 180 for about 25 mins until the top is golden brown
You can open the oven door to check without ruining it.
There are probably threads about lasagne here - one of the mods will be along soon to show you where. Keep it simple
Good luck

I find it easier to use the lasagne sheets you don't need to cook-the tesco value are really cheap and fine (see if yours are ok to use unboiled). I personally wouldn't use the pesto as thats pine nuts, olive oil and parmesan-you can just use that on it's own as a pasta sauce though.
I gently fry onions and garlic in oil until soft, add the chopped veg for a couple of minutes then add a tin of tomatoes, squeeze of puree and some salt, black pepper, tsp of basil and a tablespoon of tomato puree. Bring to the boil and simmer until the veg is softening. Put some in base of dish,a litle white sauce on top, then a layer of lasagne sheets, repeat finishing with white sauce topped with grated cheese. In oven around 180 degrees for 25-30 mins until cheese browns. I make my own all in one white sauce-much cheaper so maybe you could build up to that!
Some people still slice aubergine, sprinkle with salt and leave for 20 mins before rinsing and patting dry before using. I have a french friend who always does this, saying they are bitter and watery otherwise, but I haven't bothered doing this for years!
You have a few recipes to try now already!Tomorrow is always fresh, with no mistakes in it!0
