stuck in a meal rut

    Tofu is quite versatile, and very good for you. And you get some recipes on a leaflet in the packet.

    Hi
    I'm vegan & am the only one in the house that isn't an omnivore so most evenings I end up cooking two different meals. I also work full time so have little time.

    I get around this by bulk cooking at weekends for myself. I make something like a nut roast, most recipies are 6 - 8 portions, & just freeze the rest. This will work well with most things including the burgers, fritters & tarts suggested by Catkins. Within a few weeks you'll have masses of meal choices that'll only need the veg or whatever you're having with it preparing.

    This evening I'm slow cooking a gammon joint for everyone else & I'm having a pre cooked chick pea curry that was in my freezer from a few weeks ago.

    This morning I've made a big batch of dip/spread that'll be good for weekday lunches either spread on bread or for dipping crudites or an evening stuffing for jacket potatoes. I based it on home made houmous but used some fresh broad beans that were in my veggie box this week & a tin of cannelini beans that were lurking at the back of my cupboard.

    Takes a bit of planning but it's really worth it as you get a lovely, healthy, varied diet that's all home made. YUM.

    Another veggie here who also falls into ruts sometimes!

    My solution is to take down one of my recipe books at random, or make an effort to select one of those that I haven't used for a while, and then go pin sticking! Or close my eyes and choose a page, and then I WILL put that recipe on my list for the next week!

    Helps me try new things - you can always try your local library if you don't have recipe books to hand.

    Or there's always google cooking - type your main ingredients into Google and cook the first recipe you see!

    I forgot to add that at this time of year I eat a lot of salads - lots of leaves plus some advocado slices, baked/grilled/fried tofu or tempeh, sometimes pulses or some grapefruit segments. You can also have a lot of fun with dressings as well. Salads are also easy to make for one as well.

    Well, this weekend I did the "stick the pin in the recipe book" trick. Had to do it twice because the first try I ended up with Tiramisu (lovely, but not really a meal!), but ended up making a very nice spicy lentil flan. I had to improvise a bit, due to not having all the ingredients (replaced courgettes with mixture of mushrooms and peppers), but hopefully its my first step out of the rut. You've all given me plenty of inspiration, I'm just trying to work out what I'll be having tonight now!

    Loads of indian/ bengali food is veggie isnt it, things like dhal, potato & chick pea curries, that sort of thing.

    We try to have one veggie evening meal a week, so we do things like linda mccartney sausages & mash, or bean chilli, or spag bol with soya mince. Or a roasted veg plait/ pie type thing.

    roasted veg lasagnes & pastas

    If you eat eggs, you can do spanish omelettes or mushroom omelettes type things.

    Summer soups like carrot, or beetroot would be nice too I guess, can be made in bulk.

  • I've just bought a curry recipe book actually. Lots of different spices required, so I'm going to have to stock up on my next Julian Graves trip!

    I do one where you slice and fry a red onion. Slice potatoes, peel, core and slice cooking apples and core and 1/4 parsnips [or some other sweetish veg] and chop up. Then layer the different veg up ending up with potatoes on top. Season & add 1/2pt veg stock with a pinch mixed herbs in. Top with grated cheese [or omit for vegan version]. Cook 1 hour 200C
