Another use for left-over egg white

If ever I make custard or home-made ice cream I always use fresh egg yolks, not Bird's powder. Unfortunately this leaves me with several egg whites left over. The usual suggestion for these is to make meringue.
I found a recipe today which is quick and which uses only the white of the egg, so I thought I'd share it with you. (Don't be put off by the name, by the way. No billion pound taxpayer bills here! :rotfl:)
Financiers
Serves 4
Prep. 10 mins.
Cooking time 20 mins.
80g powdered almonds
60g flour
100g butter
150g sugar
4 egg whites
(1) Cream together the egg whites, flour, sugar and almonds, beating well.
(2) Melt the butter and fold it into the mixture.
(3) Pour into a well greased fairy cake tin or paper cases and bake for 20 minutes at 200 degrees C, gas mark 6 to 7.

Thanks for that; I've always just made Philadelphia-style ice cream (which doesn't use egg) because I didn't know what the heck I'd do with the leftover egg whites, so I can have a go at the custard-based ones now.If your dog thinks you're the best, don't seek a second opinion.;)0
