query about chicken?

sorry to put this query to you but tried to google it to no avail, so wondered if you can help?

I am jointing a fresh chicken for 'rubber chicken' meals and on removal of the two breasts there seems to be a small area of what looks to be 'cooked' chicken in each breast- in that it has that 'texture' and those patches are slightly yellow too. Is this weird/ dangerous? Chicken was bought yesterday from tesco-with display/use by date of 6th Dec and smells fine, including the suspect areas. Any ideas what this is and if it is a problem in the using of the rest of chicken- gonna bin those bits for sure as never seen this before- just wondered if this is usual (never seen it before- thought could be freezer burn, although says can be frozen so should not have been previously frozen?)

  • If it's yellowish I'd suggest it's fat.
    I always find there's a "flap" (for want of a better word) of fat just inside the carcass - usually on the left side as you look at it with the breast upwards. (dunno why it's on that side just seems to always be).

    It's probably a bit late now, but that sounds like freezer burn to me - I've frozen raw chicken before and it goes exactly how you've described if it gets burnt in the freezer.

    It's possible that the chicken has been frozen before, even if the packaging says it can be frozen again - I've bought meat from supermarkets before that has a label saying it has been frozen and defrosted under controlled conditions and can be frozen again at home (or words to that effect, anyway).

    If you're at all uncertain I'd take it back and ask for a replacement. I can't imagine they'd make a fuss about it, and it's better than making yourself ill if there is something wrong with it. If you've gone ahead and cooked it I wouldn't worry, though - freezer burn doesn't do any harm, as far as I can tell! :)
