Leek & Potato Soup

I get a veg box every two weeks and now have one potato to last until this coming Monday so I'd rather not use it in leek and potato soup, so has anyone used instant mash in their leek and potato soup in place of the potato? Does it work? I will be blending the soup after so it won't affect the look

Interesting thought there - but never tried it before, so wouldn't know. Wouldn't like to advise you in case it results in wasted leeks.
Would like to add, that one of my objections to the veg box that I sampled (designed for 2-3 people) was not enough potatoes. Lots of yummy veggies (cabbage, cauli, curley kale, carrots, swede, two (again why only 2!) onions, couple of tomatoes) but only about 2lbs of potatoes - why on earth would they do that? My OH can eat 2lbs of spuds in one meal :rotfl:!

Never tried it, but can't see why it wouldn't work - it'll just be like adding mashed potatoes to the cooked leeks and will just thicken the soup, surely?Resolution:

I was getting a veg box every week but found I was getting the same veggies every week, so I've moved over to a fortnightly box and although I don't have quite enough to last me two week, I do have more variety. I don't mind a little top up here and there but I've been out a lot this week and I don't want it to go too waste!0 -
Hmmmm... interesting idea. Personally I would go and buy a bag of potatoes (you know they won't go to waste), or combine the leek with another veg. A little bit of instant mash is ok as a thickener, but I imagine the soup would be very salty and I just don't think I would take the risk.
Perhaps you could use the leeks in another recipe you do have the ingredients for?

Edit - do you have carrots and lentils? The leeks would make a nice spicyness to carrot/lentil soup

The problem is I'm not in very much this weekend so I don't want to buy more food only for it to go off. I want to make some soup for lunch on Mon and Tues (next box arrives on Tues evening)
In my fridge I have;
two leeks
two carrots
cauliflower
broccoli
salami
some baby plum tomatoes
plus that one potato
Could I make the carrot, lentil and leek soup using broth mix instead?0 -

Ok, yes I would try that indeed. Most things combined make a good soup to be honest. The cauli and brocolli i think are too strong tastes to put in with this though.
Now, I'm telling you what I would try myself.
I googled "leek carrot soup". Obviously your quantities are different but I would just use the principle, and add the broth mix to thicken it. if you can't start with an onion don't worry too much . Most things start with an onion though!

I use leek in place of onions in most recipes where the onion/leek isn't visible. e.g. curry, spaghetti bolognese, soups etc.
Leek gives a much milder flavour than onion and doesn't repeat on you quite the same!0
