Why can't i get my bread to go right???

Bought a MR bread maker a couple of weeks ago but not having much luck with the loaves. Aiming to make a basic white loaf following the recipe in the instructions received with the BM.

1st attempt was very dense and stodgy in texture and tasted very sweet.

2nd attempt was more airy and kind of like crumpet texture.

Please can someone help me to make a decent loaf?

I always reduce the amount of sugar they say in these recipes as I think it tastes like brioche otherwise!

I'm not quite sure about anything else to try, apart from follow the ingredients to the letter (apart from the sugar). Good luck.
