    I have this book but so far have only used the banana cupcake recipe, although I added cocoa powder to it as I fancied choc and banana and they were lovely!! Then I made choc buttercream with nutella for the tops :drool:

    Haven't made the vanilla recipe but to be honest I wouldn't bother as my vanilla cupcakes are great as they are, so I am told! (I have a small business making cupcake wedding cakes!!) And to let you all in to a secret, my recipe is basically a victoria sponge recipe. The trick I find is to use really good quality vanilla.

    The carrot and courgette muffins are yum, as are the banana ones. I've also made the lemon meringue pie, which was lovely. I've stuck to the recipes and not had a problem.

    Coming in a bit late to this thread, but I noticed that the corrections say that you should only fill the muffin cases two thirds of the way to the top otherwise you get a muffin top if you fill to the top. Maybe this is why there is only enough for 9, because they are being filled to the top, instead of the 12 as suggested.

  • I LOVE this book - the recipes are bit labout intensive (lots of bowls needed). I find that I need to really soften the butter otherwise the texture isn't as nice. Green Tea cupcakes are amazing as are the chocolate ones, and I've had real success with the vanilla ones. yum yum yum

    I think as the recipes were originally conceived in the states they cater to that kind of taste and also would have been using US ingredients so somepeople in the UK just don't like them.

  • I usually make the chocolate cupcakes and thought I'd give the muffins a go this time however it lists 160g butter, does anyone know if this is correct as it seems a lot, the cupcakes only use 40g and the other muffins use 30-70g. Have had a look at the Hummingbird website at the corrections and can't see the chocolate muffins listed. Any ideas?!

    To those that have had problems, I initially did with the cupcakes but when I started using large eggs instead of medium they have been much better. I also divided the mixture between 12 cases, now I just do 9-10 and they are spot on. Good luck!

    They are fantastic!
    I made mine in a low square tin, cooked them for less time, and sliced them like brownies.

    I made the vanilla ones and they are the best cupcakes in the world - I even hid one so I could have more. Strange technique tho mixing them till they are like sand!! Don't care cos it works:)

    My dd has made the vanilla ones and the choc ones and they've turned out really well and she isn't that experienced a baker. I made the chocolate cake (can't remember what it is called) with the choc custard like filling, it was gorgeous and stayed moist for several days - it was very rich and also enormous so it needs a large family to eat it.

    I think its called a Brooklyn Blackout cake?
    Thanks for getting this thread to the front page, I hadn't seen it before. I have this book and like others, recipe success has been pretty hit and miss. Now I know about the corrections I'll have to do some more baking ;)

    Ps. I highly recommend the red velvet cupcakes.Nom.

    And even if some of the recipes do annoy me....I enjoy just looking at the book!
