Ginger cake - with fresh ginger?

Hi all,

I'm off work following an operation, and fancy doing a bit of baking this afternoon. I have a large fist sized piece of fresh ginger in the kitchen, and wondered if i could use it in a cake? All the recipes i've found call for ground ginger.... Any ideas would be appreciated.

  • Any sponge type cake will do, just added finely grated fresh ginger, and for better effect, orange or lemon rind too. Yum.

    Yum - I'm in the same situation as Gillby1 and might try this as well. Maybe poke holes in the finished cake with a skewer and make a lemon drizzle.
    The ability of skinny old ladies to carry huge loads is phenomenal. An ant can carry one hundred times its own weight, but there is no known limit to the lifting power of the average tiny eighty-year-old Spanish peasant grandmother.

    Thanks - i think i'll follow a ginger cake recipe and add fresh ginger instead of ground, then.

    Any other ideas for using the ginger would be welcome! x

    I did pork steaks and peaches, in fresh ginger/soy sauce/honey/olive oil the other day, and it was lovely.

    Personally I'd be a bit hesitant to use fresh ginger in a cake. Its got a different flavour. You can't replace fresh ginger with dried in a recipe for a stir fry etc, so I'm sure it works the other way round using fresh instead of dried.
