What to do with Crown Prince Squash

In the veg box this week we got a crown prince squash (I think it is anyway...its a bluish colour), any tips on how to cook it/what to do with it

    I would put a squash in a stew or casserole along with other veg.
    If winter comes, can spring be far behind?
    Spring begins on 21st March.

    You can use it for anything you'd use a butternut squash for, really - it's pretty similar in most respects, I think. I love squash roasted, either on its own with salt and pepper or with other veg, or curried, or as soup, or with chorizo and tomato as a stew or... just about any way, really. I'm very fond of winter squashes! :D

  • chop it up and roast it with some peeled garlic cloves and a little olive oil. Then whizz it up with some stock and some diced and cooked onion/carrot/celery to make a gorgeous soup!

    thanks guys, cut up one slice of this lastnight to put in sausage caserole and it was very nice..seems much firmer than buttenut squash and the skin seems very hard to peel

    It's delicious roasted along with the Sunday roast potatoes, or as part of a roast vegetable mixture served on a bed of brown rice with a lemony sauce made with the juice of a lemon, half a chicken stock cube, a little cornflower and boiling water. It also goes well in a mixed vegetable curry, and you can even roast chunks, cover them with apple sauce and some cream and serve them as a dessert. As this vegetable lasts a long time, be sure to cover the cut exposed surfaces with clingfilm to stop them drying out or starting to rot.
