Dried beans?

Ok so I'm taing the storecupboard challenge very seriously today:j and have listed everything in my freezer and cupboards, now I'm looking to do things with it to make it more usable!

I've come across several packets of dried beans. I always buy them and then don't use them as they take so long! Question is: does anyone know if it's safe to soak n boil the beans, and then freeze them to use again? Anything special I need to do to them?

Thanks :o

Have you got a pressure cooker?

This will cut dried bean prep time significantly, you may still have to soak overnight but not sure

I always have pre-soaked and -cooked pulses in the freezer. I get several meals worth prepared at once and thenfreeze and pull them out of the freezer to use when needed, Been doing this for years after reading it in one of Rose Elliotts veggie books. It really saves prep time and is much easier :)

You can cook and then freeze in batches.
I find dried cooked beans a great addition to stews, lasagne, chilli, etc to bulk it out.
You can also make pate with some beans (kidney for one!) and they are also nice cold in a salad, eg tuna and bean salad.
