Mandarins, what can i make with them?

OH is a bit fussy so i want to make them into some kind of dessert i think?

any ideas frugal peeps!

    I often use fruit like this just cut up into segments and put into a fruit jelly. If you have a little cream or whole milk, add slightly less water to the jelly and whip in some cream or milk to make a milky jelly pudding.

    I don't know if you've got enough staples to make this, but if you have, it's a brilliant standby to have in the cupboard - saves weighing things, and means you can always rustle up muffins at the drop of a hat:

    HM Muffin mix:
    8 cups plain flour; 3 cups sugar*; 3 tblsps baking powder; 2 tsps salt; 2 tsps ground cinnamon; 2 tsps ground nutmeg. Mix everything together and put in a large, sealed tub.
    * this is the American version which is not terribly sweet. You may want to up the sugar to 3 and a half cups.

    Method:
    Preheat oven to 400F. Grease muffin tins (or use paper cases). In a bowl, combine 1 beaten egg, 1 cup of milk and half a cup of vegetable oil. Mix well. In a larger bowl, measure 2 and three-quarter cups of muffin mix. Tip the liquid into the muffin mix all at once and stir. Mixture should be lumpy. Fill prepared cases or tins three-quarters full. Bake 18-20 mins until golden brown.

    Banana muffins: mash one banana and add to liquid ingredients before adding to muffin mix
    Blueberry muffins: fold one cup fresh or frozen blueberries into batter just before filling cases
    Peach muffins: add one cup fresh diced peach to batter before filling cases
    Choc-chip: add bits of chocolate to batter before filling cases
    etc. etc.

    My DD (who turned 14 last month and is not the most proficient cook) has astounded all her friends by making them cakes in this way. It is so simple and very foolproof - perfect results every time!

    Other mandarin ideas - if they're tinned, then they're nice in or on a cheesecake, HM or even a Green's ready mix one (who said that?!). They're also nice in a fruit jelly or HM "mousse" and - at work - we have them on our salad bar. Basically you mix drained, tinned mandarins with melon chunks and stir in a mayonnaise dressing. Sounds foul but is delicious.

  • ive just made a huge batch of these muffins but i subbed some flour for cereal bits left in the bottom of boxes, a mix of oats, weetabix crumbs and bran flakes and then i added a banana to the liquid mix.

    hopefully theyll be ideal breakfast muffins for OH (im a low carber!)

    I have used drained tinned mandarins on top of a sponge mix before. They sink down as the cake cooks, but its lovely.

    tasting one is SOOO not worth it, we are going on our honeymoon in Feb after getting married this summer and i am NOT wearing a bikini right now lol

    He had one warm from the oven and says they are fabulous, he couldnt believe what id used in them, and was very impressed! he asked if we had some custard :rolleyes:

    i will take some into the boys at work tomorrow and get their opinions to :) Theyve had a good month for me this month and while i cant reward financially, i can do my bit!

    i really want one though, they smell awesome... :rotfl:
