    Interesting debate regarding the eggs, I find the fresher the better stops mine from "weeping " also as I have a fan oven I reduce the temperature, plus I use icing sugar if I have some spare to use up, best tip is to de grease your bowl and whisk I use lemon juice, and separate the eggs individually so if I have a mishap I do not lose all my egg whites.

    It's time to defrost the freezer (I normally find that when you can't close the drawers is a good time to do it:cool:)

    The trouble is the OH insists on making spag carnonara with loads of egg yolks so always just chucks the whites in a container in the freezer.Somy problem is i want to make a pavlova but i dont actually know how many egg whites i have-does anyone know the weight ratio for an egg white to sugar???? Or has a receipe that gives you the weight of the egg whites??? A long shot i know!!!

    Apparently one egg white weighs approx 28g or 1oz
