Carribean recipe? Konki?

A work colleague gave me a piece of 'Konki' the other day - it was yum! He said his Mum made it from an old family recipe, but basically it was cornmeal, coconut and dried fruit, he said something about papaya too? It was mixed together and rolled into a sausage, cut into pieces and wrapped in foil then baked (I understand in the Carribean it would be wrapped in Banana leaf instead.)
Does anyone have a recipe please as it was delicious.

Pink-winged, thank you so much for that recipe, I grated my knuckles perparing the sweet potato, but it was so worth it. The recipe made loads, so will take some into work for my friend to try.
