Fridge food - advice please

I wonder if any of you lovely people could help me save some serious money. At the moment I'm spending way too much on food as most weeks I don't know how many evenings I'll be at home so I either a) buy lots of food that goes off or b) buy nothing and end up eating out.
So I'm looking for suggestions for meals that I can cook at the weekend, leave in the fridge for up to a week (I don't have a freezer), then eat whenever I'm home without endangering my health - is this realistic? Or alternatively, ideas for meals that I can make up quickly from stuff that keeps well in the fridge...

I make spanish ommlette out of stuff that wouldn't go off.
fry off onion, then pepper & add chopped cooked potato (I cheat & use a tin!) & then cook with eggs over a low heat.
Cook top under the grill.
This makes 2 portions for me.
1 portion for dinner, the other cold for lunch perhaps.
If you have a microwave, keep a few spuds in, bung en in the microwave & top with beans & cheese/tuna mayo etc etc
Do you have a really little freezer or not one at all?
Ummm, pasta pesto is another one. The pesto will keep opened in the fridge for about a week. I usually cover the pesto in more olive oil once I've opned the jar.

the key is to menu plan. Say the days after you go shopping you can make food with the things that dont keep well ( some veg, some meat etc) along with more cupbard food towards the end of the week.
there are lots of things that will do OK out of the cupbard -passata is great for pasta saauces and sauces for cooking chicken ( spanish chicken)
Cheese keeps well in a fridge, so you can base meals around cheese/ eggs/ bacon ( long life in packets) rice, potatoes.
A roasted chicken will last a few days once cooked so you can cook one and use it for umpteen different things (pies, pasta sauce, soups, curry etc)
