How can I cook a couple of rabbits ?

Hi,
I've got a couple of rabbits stuck in the freezer, just waiting for me to do something with them, but I'm not sure what I can do with them.
I was going to just casserole them, but is there something better/tastier I can do ?

Rabbit & gammon pie using hot water crust pastry yummy.
Basically you boil the rabbit for a few hours, stain and set the stock aside. Grill the gammon and chop up and get meat of rabbit bone.
Fry some onions add flour, then gradually stir in stock and add the meat. Season to taste.
The hot pastry is 225g of plain flour, 1/2 tsp salt, 100ml water, 75g lard & egg yolk.
Mix flour & salt in a bowl and make a well in centre.
Boil water and lard together, and add quickly to the flour. Mix rapidly with wooden spoon. The you knead it until dough is soft & pliable - roll out as normal, and brush with egg yolk.
This pastry needs to be done very quickly - but is well worth it!
Put in oven we put ours in 180 (fan assisted oven) for about 40 ish minutes (till pie is golden - make sure base is cooked - if not put foil over pie and cook until base is cooked)
OH normally doubles the pastry recipe and we get two pies, from one rabbit and 1 slice of gammon.0 -
No need to get fancy. A simple casserole is pretty damn tasty especially if you use cider or white wine for the liquid- no stock cubes necessary.0

I have a Nigel Slater recipe, but it's a bit like this one 
I have rabbit casserole on my menu plan for this week, but I might make this with fresh pasta as I have a week off work :T

I like to wrap them in bacon and roast them with rosemary, sage, garlic, and red wine.. Ends up scrummyIt's not easy having a good time. Even smiling makes my face ache.0

I do ours in the oven smothered in wholegrain mustard and a cream and mushroom sauce - yum!
