I've been on a mission to reduce my food waste, which is my biggest money waste too. Thanks to help from this board I've got recipies to use up everything except salad, which just doesn't freeze.
I'm really not a big fan of salad, but I am trying to eat more as part of my attempt to eat more healthily, but I can't eat enough of the stuff to avoid throwing out some soggy sad looking vegitation after a few days.
What do you with your leftovers? Is there anything I can do to it to be able to freeze it? Has anyone tried blending it smoothie style?0 -
I know Gillian McKieth blends cucumber for a cucumber juice (not sure if she adds anything else) and maybe try slicing and frying the lettuce in a little butter, tastes a bit like cabbage!!!!0

Thanks, I hadn't thought of those either. Just did a search to lettuce soup and found these
Lettuce and Garlic Chive Soup
Watercress and Lettuce Soup
which both sound fab. And the stir fry will help me reduce the mountain of stir fry sauces I seem to aquire everythime they are two for one!0 -
Tip for making lettuce last longer. Wash the lettuce, drain it and put it in a storage container. Then place slightly damp kitchen towel on top and then seal with lid. Don't know why it works but it does make it last an extra 2-3 days.
