ok Phil to make this little bit of food delight
line a square or oblong tin with foil
1 large pack of digestives ( i couldnt be bothered with proper shortbread) - melt enough butter to really coat the didgestives well - about 4 -5 oz (i did it by eye)
smash the digestives to fine crumbs..our melted butter to mixture
spread evenly into tin about 1cm thick (ish)
put in fridge
1 can condensed milk
4 oz butter
3 oz of brown sugar (i added 2 oz brown and 1 oz caster)
1 tea spoon honey (optional i left it out cause thought would be too sweet)
put it all in a pan and put on medium heat, stir constantly til just at a bol, turn down heat and continue to stir til smooth and mixture thickens make sure no sugar crystals left) take off heat and stir for 1 - 2 mins until thick and smooth
pour onto base - spread out and return to fridge -once caramel is just set
melt 200g decent milk chocolate (i used 400g think it was too much unless you want thick topping)
place heat proof bowl ocer simmering water, add chocolate to bowl (make sure bowl is a snug fit so you dont get steam in and ruin chocolate)
once melted - pour over caramel and spread evenly
return to fridge
just before chocolate sets completely - cut into squares
return to fridge and wait til set..then devour
Now imust resits trying another piece..cause that was sooooo delicious
cost £4.50 and i will get about 50 squares so pretty good value0 -
