can i pickle beetroot with cider vinegar??

my beetroot is now out of the ground! going to boil it soon! BUT can i use cider vinegar? and do i have to make the vinegar hot (as well as sterelising the jars?). would be everso grateful if someone could answer me as this is my first time with home grown and trying to preserve!!
