Bargain Veg, But help please!

Good evening all, just a quickie for all you fantastic chefs. I have just got back from the co-op and have bought 3 stew bags of veg for 30p each:D They have a couple of onions, several carrots, couple of parsnips and a small swede in. I am intending making a beef casserole with one, but the other I just wondered if I could make a nice soup? Could anybody tell me whether these ingredients would work in a soup? Also any yummy recipes you may have.

My nan makes this in the winter - it's lovely and warming:
1 swede
2 parsnips
2-3 medium carrots
1 litre vegetable stock
1 onion
Method
Basically peel and chop all the vegetables into small cubes, bring the stock to the boil and add the vegetables. Simmer for 20 minutes until the swede chunks are soft.
Add any herbs and spices of your choice.
Liquidise (if desired) and serve with crusty bread.
For a more filling version, top each bowl with about 30g grated cheddar

if you have the oven on, chop the veg into chunks, stick some stock over it, pop a lid on and leave in the bottom of the oven until the veg are soft. Blend and then serve with a blob of yoghurt.0

Onions, parsnips, carrots, turnip --- delicious roasted with a sprinkle of sugar on them just befor they come out of the oven to caramelise them

I too advise chopping and freezing if not using straight away.I often buy veggie that have been marked down for the purpose of making soup.I chop them all up and fill my slow cooker up with some veggie stock to cover and put it on just before I go to bed.In the morning the kitchen is warm and I have three litres of soup.I remove about half on a slotted spoon and whiz through my food mixer to puree the veg then put it back with the rest of the remaing soup and mix with a wooden spoon until its all become a rather thicker soup mix.Turn off the SC and let it cool down for a bit then bottle (I use some plastic bottles that my DDs gave me from when they had bought soup froom sainsbugs) or bag it up in Lakeland soup bags(Can buy these for around £4.00 for 20 in Lakelands and they can be used over and over again), when cold for freezing One big pot of veggie soup will give me a good half a dozen portions for the freezer.I also put a sprinkle of herbs or garlic salt and a handful of lentils in as well to bulk it up and add some flavour.Home made soup on a cold day with crusty bread is a meal in itself and a fraction of the price of tinned stuff and a lot tastier.0

Hi all, thank you for the extra advice and recipes, well I didn't get round to making my soup the other night, so I have done it this morning along with a beef casserole in the slow cooker, a shepherds pie and I am about too put a chicken in the slow cooker( I have 2 slow cookers) However I want too make lots of yummy chicken stock so any advice how I can do this would be appreciated, I also have a remoska if it would be better to cook the chicken in that?!
