Anyone Makes Chicken & Stuffing Sandwich?

    They may taste nice but have you looked at the amount of calories & fat in the shop bought sarnies? Im sure you could make a nicer and healthier sandwich from home, its just a case of trial and error

    One way I've found of making it nicer is I greatly prefer it with the stuffing 'uncooked'. That is to say stir in the hot water and mix to a spreadable constancy but don't bake it. Everything in a packaged stuffing mix is cooked anyway and it stops the chicken being dry without needing a huge amount of mayo.

    Also, mayo's bland in general, try being converted to the dark side and switch to saladcream.

    Thanks everyone for the ideas :) really useful. I enjoy eating them but only today looked at the label, the amount of calories and that in the sandwich is quite shocking and it seems easy enough to make at home. will sure give it a try :) x

    would you like the recipe for home-made sage and onion stuffing?
    my version is
    about a half of a loaf of bread - either grated or blitzed
    good couple of teaspoons of dried sage (i use homemade - but you can get ready made dried)
    finely chopped half onion or whole onion if you want
    and (horrors for anti fat brigade) a couple of ounces of lard
    combine all ingredients - you can add salt and pepper if you like
    stuff joint or cook separately. but cook for at least an hour. in oven. in joint or around it in tangerine sized balls.
    i prefer to stuff joint with this and you can other flavours - apple or lemon go nice with pork or chicken. cranbery is nice with chicken or turkey. just add zest or dried fruit to stuffing. or - and this one is delish - dried apricots go so well with pork!!!

    When I make chicken and stuffing sandwiches (which is often, cos they're YUM!) I use good white bread, spread a thick layer of wet stuffing (just add boiling water to stuffing mix, cover and leave for 3 mins, stir to a spreadable paste), then cover with sliced roast chicken, flake a little salt over it, and then cover with another slice of bread. I sometimes butter the second slice.

    If you're not eating them right away, you should really let the stuffing cool down once you've spread it, as it might make the chicken warm.

    I suspect my home-made chicken and stuffing sarnies will have MORE calories than a shop one!

    I wonder if you'd like what my old Mum used to make with sunday lunch leftovers?

    She used to put the left over meat, some of the stuffing, gravy and few onion slices and stock to make it runny...all in a pan to cook ...called it chicken hash. Served with spuds to soak the gravy up.

    Like a sage and onion stew with chicken really :D
    Tasty if you like S&O stuffing though.
