My mum loves this and I'd like to make her some for christmas but the only recipe in my books is for ginger and marrow marmalade.
I did a search but had no joy....has anyone got one preferably that they've tested which definitely works?
Thankyou x

I got this recipe from this forum (I think from the what to do with marrows thread)
It is absolutly delicious and much of it got eaten whilst 'testing' the mixture.
you would never know it has marrow in it (it tastes more like apple) and I'm pretty sure this is what your mum is used to as it is a well known recipe
I used ginger puree as I somehow have a fridge full of the stuff!
Only problem is the look on folks faces when I tell them what it is - I now label it 'surprising ginger jam' (the surprise being it is made from marrows) I only give away the secret ingredient after it has been tried.
Marrow and Ginger Jam
4 lbs marrow - that is peeled and seeded and chopped into half inch cubes.
4 lbs sugar
1 oz root ginger (note from OP: I used this much with 2 lbs marrow and it was very nice - a matter of taste I think)
thinly peeled rind and juice of 3 lemons.
Put the marrow in a basin and sprinkle with 1 lb of the sugar. Leave overnight.
Bash the ginger - I used a rolling pin - tie it in a piece of muslin - I used a piece of old tea towel - and put it in a pan with the marrow and lemon juice. Simmer for half an hour.
Add the rest of the sugar and boil gently until the marrow looks transparent and the setting point is reached.
Remove the bag of ginger and pot up.0
