Pimp up my sausages

Options
I have 4 leek and pork sausages for dinner tonight for me and DH, they are leftover from dinner last night, which was saus, roast tats and vege. I don't want to do the same meal, so was after some ways of making them seem less repetitive, I have the following in the store cupboard.

Carrotts
Tatties
Onions
Red and Green peppers
Cous Cous
Rice
Beans

Any ideas?

    Sausage stir fry with rice?

    Slice up onion, peppers, carrots, sausages. Fry them up, add a dash of soya sauce and a drop of lemon juice and have it with rice.

    Or stuffed peppers with couscous and sausagemeat.
    Slice up onion, de-skin the sausages, fry them up. Slice peppers in half,make up the couscous in a bowl. Mix half the couscous with the sausage and onion mix, and place at the bottom of the pepper. top with the rest of the couscous, in the oven for about 20-25mins until they are cooked. For a crusty top, blast under the grill for a few mins. Serve with grated carrot and bean salad.

    Sausage casserole is always comfort food and can go with anything or be eaten alone.

    I just fry the onions a little to soften, add the sausage and any spices or seasoning and some tomato paste and lightly brown ...add some stock and then the veggies ..and whack in a casserole dish and bake slowly until ready in about 1hr. Slow cooker would be great for this too.

    Nice easy thing to mess with and adapt to what you have ...just sausages onions and carrots is enough, if you have other vegs that's a bonus.

    I like a little lea and perrins in there, and mustard .

    Toad in the hole with onions in the batter, or sage ...that's easy and filling too. Gravy is important to that IMO though.

    We had sausage casserole last night served with couscous rather than potatoes and it was delicious, although the stuffed peppers sound good too. :drool:
