Recipe help - Couscous a la viandes & smoked garlic

Evening all :)

While we were in France this week we were served a delicous dish they merely titled "un couscous". It came with a platter of plain steamed couscous, a large chunks of chicken and mouton in a broth, a rare beef kebab, 2 merguez sausages, a bowl of broth containing courgette, carrots and chickpeas, and a tiny bowl of very hot sauce.

Does anyone have a recipe for this dish please? I've done a google search using "couscous a la viandes" with limited success.

Also, I bought 3 bulbs of smoked garlic, and was wondering if anyone had a recipe to use it? I tend to roast it with chicken, and wanted something else!

    Hi Paulie'sGirl,

    I have had the dish you are talking about in France. I think it was originally a Moroccan dish which has been adopted in France and is sometimes known as couscous royal and sometimes served with harissa stirred into the broth. If you have a look on google there are quite a few recipes and you might find one which sounds like the one you had.

    I use smoked garlic just as I would ordinary garlic but it's great sliced into small slivers and inserted into a raw chicken before roasting or using with fresh tomatoes to make a sauce or fresh tomato soup.

    Yeah, I gathered its a Magrebin dish. I suppose a bit like we adopted curry they adopted North African cuisine.

    A French friend made it just with chicken for me once years ago, and I've never been able to replicate it. Do you think Ras al Hanout might be the missing flavour?

    Good job I speak good French, I can't find a "recette" in Anglais anywhere!!! ;)

    I'll definately try the smoked garlic in tomato soup, I hadn't thought of that!
