Remortgage help please

I am looking to remortgage and have been offered 4.19% for 2 years (C&G). With the present current Standard Variable Rate being 2.5%, what is there to stop me staying on this variable rate until 11th February 2010 which is the date I need to start the new mortgage? If the C&G rate increases before 11th Feb. can I still refer back and take this rate?
