Inspiration with Chicken Stock

Ok so I know im working backwards here but today I cooked a whole chicken in the slow cooker which was gorgeous
Anyway being a proper OSer and all that I lobbed the carcass back in the liquid with some onions and carrots and will soon have a really nice chicken stock. However apart from chicken soup which I dont really like I am stuck for a really good use apart from as usually happens filling a space in my freezer :rolleyes:
Any ideas?

Do you like any kind of soup? I mske al sorts with chicken stock as the base. What about carrot and coriander? Or curried pasnip? Or leek and spud?0 -

As Haribo says any soup will benefit from hm stock whether chicken, beef or veg stock.
I keep my stock in the freezer and use it in stews, casseroles, risottos, gravies, sauces (instead of the milk in a white sauce for things like chicken pies).0 -

One of my favourite easy meals

Do you have any of the chicken left? Use that and a selection of your favourite veg. I always have leftover risotto, which I freeze in individual portions for work lunches, That's what I have for tomorrow

I add noodles & spinach or another green veg to my chicken stock for a quick supper. It's one of my favourite meals! If I'm defrosting it, I'll reheat it with a bit of lemongrass & chilli to give it a bit of zing (don't do this if you're eating late, it wakes you up!). Otherwise, like Penny, I go for risotto.0

Jamies mushroom and parmesan risotto made and thoroughly enjoyed. Thanks again you lovely peeps and by the way is it ok to freeze risotto cos i made enough for 14

Yup, its fine. And you can also form the rissoto into cakes and fry it. I can't remember the italian for it, but its lush!!
