Does anybody know this recipe?

A lady who used to work in our office used to make savoury rolls with (I think) pork mince, sage & onion and slices of tomato and sell them round the office for things like Children in Need and Comic Relief. They are completely delicious, like suxury sausage rolls, but she would never share the recipe.

Several weeks ago I came across what I think is the recipe in a book, but now I can't find it again :mad:

They used to go down so well that I thought I might make them bnow she's gone - anybody have any ideas how to do it?

  • Sounds similiar to the pork fillling that I use in my plate pies.

    I use 1lb sausage meat, a packet of 'Basics' sage and Onion stuffing mix, a large chopped onion and an egg (optional).

    Very quick and easy but really delicious - make up the stuffing mix, peel and chop onion and mix togther with the sausagemeat - if you have a spare egg - beat and add it as it willl help the mixture to bind together.

    Use as much as you need for each pie, spreading it out over the pastry base and then top with whatever you have ...sliced tomatoes, leeks, peppers etc ...or try my favourite ... sliced apple before popping the top on and baking.

    It cuts easily into slices, can be eaten either hot with veg or cold with salad. It freezes well and is handy to have in the freezer for those days when you need a quick filling (and cheap) meal. :p

    Thanks charleys-aunt, that does sound pretty much like it, except that she put the mix on squares of pastry, topped it with slices of tomato and folded the corners over.

    I do love the idea of apple though, in my head it will be better than the tomato, so I will have a try today and report back. In fact I might just have to taste several versions to be absolutely sure I've got it right ....;)

    Well tbh it wasn't what I expected, though it was quite nice.

    To be fair I didn't exactly follow charleys-aunt's recipe, I used pork mince (because I had already defrosted it), a finely chopped onion, half a packet of dry sage & onion and a grated apple. I mixed them all together and added a drop of water so it wouldn't be too dry, then made pasties with short crust pastry.

    The verdict - couldn't taste the apple at all and the whole thing wasn't savoury enough, iyswim.

    I will make them again with the following changes

    - sausage meat instead of pork mince
    - apple chunks instead of grated
    - a whole pack of stuffing made up with water rather than used dry
    - puff pastry insead of shortcrust.

    This is my weekend project - again I will report back.
